Added long-dsitance-running tag as the questioner clarified his meaning to include that.

comment Does fat negate protein?
Without doing an MRI you probably wouldn't. A body fat composition test (done with the water method not calipers or scales) might tell you. A cholesterol/lipid test might also be interesting. My key point is not to assume you can eat fat without any penalty merely because you have no belly fat.

@MattBronson Just because you don't see fat around your belly doesn't mean you're not gaining visceral fat around your organs. It also doesn't mean you won't find yourself gaining fat when you get older.

However, those chicken strips are mostly not protein so are more likely to be converted to fat somewhere in your body.

comment Is the book “Wheat Belly” credible?
I'm sad that this question was closed as I found @wOOt's answer useful. I ended up getting a lot of references from many sources so I summarised them on my commercial blog here William Davis Wheat Belly Review

comment Knees hurt after running a few days in a row. Injury possible?
Agree with recommendation to see a physio. On that very short description it sounds like ITB syndrome which is very easily treated and managed if you get on to it early. Waiting causes many more problems.
